Mrs. Hana will welcome clients into her front yard and will explain about the famous 7 spices that most Jordanians use in their cooking as Kabsa or Maqlouba, the second famous dish in Jordan after Mansaf. Clients will learn about the 7 spices roasting, grinding and cook Maqluba to eat it with Hana’s family. Mrs. Hana will tell the story of this dish that dates back to 1187 A.D when Salah Al deen freed Palestine from the Crusades. The Palestinians offered him a dish cooked with fried eggplants and chicken in a pot that they turned ‘upside down’ to present it. The dish then was named Maqlouba which means ‘Upside down’. |
